Founded in 2014, Institut Escoffier is a Mauritian private institution that was conceived with the vision of Dr. Jerome Fabre and Tiina Fabre, who sought to establish an internationally recognized institution that could cater to the needs of the Luxury industry and support Mauritius' objective of achieving a high-income economy.

 The institution, specializing in Luxury professions, strives to surpass the scope of the hotel industry by encompassing fields such as Gastronomy, Catering, Oenology, Management, and Luxury marketing. Institut Escoffier aims to equip its students with the necessary technical skills and knowledge essential to master and excel in these industries and meet the high standards of Luxury service.

Lead by Dr. Jerome Fabre, art is given a preeminent role at Institut Escoffier. The culinary arts, in particular, hold a significant value, and the institution's programs encompass elements of theater, scenic expression, performance, elocution, and posture, spanning from the Certificate level up to the MBA level.

Despite initial skepticism, the establishment of the Institut Escoffier in Mauritius was made possible by the convergence of great minds, including renowned chefs such as Mooroogen Coopen, Michel Giacomino, Yves Dumont, and Yves Bouvier, as well as visionaries like Kervyn Rayeroux and Rolph Schmid, to mention just a few.
